Simple Summer Pasta

 

Ingredients (Serves 4)

1 Packet Fettuccine 400g

2 Punnets of Cherry Tomatoes, Halved

1/2 Cup Basil, Torn

2 Cloves of Garlic

2 Tbs Capers

1 Tbs Olive Oil

1 Tbs Red Wine Vinegar

1 Tsp Sugar

Cracked Black Pepper

Sea Salt

Olive Oil, Extra

 

Method

Place tomatoes and unpeeled garlic on a tray and drizzle with olive oil and sprinkle with sea salt.

Roast at 180oC for 25mins.

Fry capers in a frying pan with a little oil until crispy.

Place vinegar, olive oil and sugar in a large bowl and mix well. Remove the tomatoes and garlic from the oven. Peel and mash garlic, add to bowl. Add the cooked tomatoes and mash gently. Add the torn basil and capers. Season to taste.

Cook the fettuccine in salted water for approx 8mins. Drain and toss through tomato sauce.

Serve with extra olive oil.
