Bothwell Venison Burgers with Mustard & Pepperberry Mayonnaise

In this pack we added this lovely gift of Tas Gourmet Foods Pepperberry Mustard. This is how we used it. 

Ingredients (Makes 8-10 large burgers)


1kg of Venison Mince
3 Rashers of Bacon Chopped Finely
2 Eggs
1 Cup of Breadcrumbs
½ Cup of Parsley Chopped Finely
1 tsp Minced Garlic
1 tsp Salt
1 tsp Black Pepper
2 tsp of Ground Dried Pepperberries

Fast Pickled Onions

½ a Salad Onion, Sliced
½ cup White Winegar
1 ½ cups Water
Good Pinch of Salt


½ Cup of Whole Egg Mayonnaise
1 Heaped Tbs Tas Gourmet Foods Pepperberry Mustard

Extra 8 Baps toasted on one side, 3 Tomatoes & 1 Cos Lettuce


1. Pickle the onions by combining onion, vinegar, water and salt in a bowl then cover and leave in the fridge for an hour.
2. For the burgers, combine all the ingredients and mix well with your hands and shape into approx 8 burgers.
3. Brown the burgers in a pan with a little olive oil and then finish in 180oC oven for approx 10-15mins.
4. Build your burgers and serve with a generous dollop of the combined pepperberry mustard and mayonnaise.
